I made Scottish oat cakes last night. I'm currently on an allergen-free diet to figure out if anything I've been eating is what makes me cough, and these things are gluten free. They're awesome, and really easy to make:

  • 2 1/2 cups quick cooking oats
  • 1/2 cup milled flaxseed optional – replace with more oatmeal if preferred)
  • 1/2 cup hot water or milk
  • 3 tablespoons melted butter or oil
  • pinch of alt
  • 1/4 teaspoon baking soda bicarb soda)
  1. Place dry ingredients in a food processor.
  2. Start the engine and pour in the wet ingredients.
  3. Add a trickle of hot water, slowly, until a thick, firm dough forms.
  4. Roll the dough 1/2 cm thick. Use a sprinkling of flour (coconut, rice, wheat, whatever suits your needs) to prevent sticking.
  5. Use a cookie cutter to cut the dough into circles 5-10 cm in diameter and place onto a greased baking sheet.
  6. Bake at 180C for 20-30 minutes, or until lightly browned. (Smaller circles will take less time. Obviously.)
  7. After removing from the oven, place oatcakes on a wire rack so that
the moisture from the underside can evaporate. Alternatively, turn over
and place back in the oven (switched off) while they cool.

Went to the Kristkindlmarkt downtown with madresal yesterday and had fun eating yummy meat sandwiches in the snow and drinking glühwein and dark beer. I bought a whole mess of marzipan and some gingerbread cookies, too.

Last night after I busted my gramophone I was really upset so I went out for a walk in the gusting blizzard to take my mind off of it. It was quiet and peaceful and I could see the tracks where the rats had run through the alley, and even the holes where they had burrowed under the snow.

Today I feel a little better. I went down to the antique store but they were closed, so I will return tomorrow when they open. On my way home I passed a Christmas/antique fair so I went up to the guy at the door and asked him if anyone inside was selling gramophone springs. He gave me an amused look and then he took me to some of the people inside and I got some more amused looks (you need a what?) but no help regarding a replacement part. I will not give up!

Then I baked a cheesecake. I've never made one before, so I'm hoping it turned out alright.

This week's muffin is cinnamon raisin.

Here's the mushroom cream sauce I'm using in tonight's chicken casserole:

The bread came out OK, but not terrific. I accidently had the oven set too low (350 instead of 400). I caught the mistake half way through the bread's bake time but the loaf came out a little flat anyway.

I've got the windows open despite the snow because it's so warm in here from all the baking. It's great having the windows open and the snow coming down. It reminds me of when I was a teenager and used to drive my parent's car around - I would sometimes, in the dead of winter, roll down all the windows and blast the heat. You had to be going pretty fast and have a good song on to get the full effect - there was just something really awesome about it.

Ok, now I've gotta bring the laundry up and jump in the shower!

As many vegetables as I can cram into the container.
I love our cafeteria's salad bar.

Beets, artichokes, mushrooms, cauliflower, broccoli, carrots, tomato, red pepper, green pepper, peas, garbanzos, sunflower seeds, bleu cheese and salad greens.

I'm glad I don't have to go anywhere today - the winds are howling like a pack of wolves out there.

Breakfast tastes good today.

Poached eggs, greens, turkey bacon, bread with brie, berries & honey in yogurt, and coffee.

I'm making beef stew today. It's about half way cooked now, has about two or three more hours to go. I had planned to do venison, but couldn't find any so I got beef instead.

I threw together some orange muffins, too. They smell good.
